How To Prepare Idli Using Idli Rava (Udupi Style)?

Main ingredients of this recipe are rice and urad dal ( lentil). This is  healthy steamed food served as breakfast in South India. Idli Batter will be prepared by grinding soaked rice and lentil into a smooth paste. Batter will be fermented first and then Idlis will be prepared out of it.All you need is Idli batter and Idli molds with steamer.

  Using the same idli batter you can prepare tumbler Idlis too.Tumbler idlis (Lota kadubu) are imitation of "Kadubu" which tastes little different than normal idlis.
  What is Kadubu? In south canara(udupi and mangalore),same batter will be poured into a tumbler prepared using jack fruit tree leaves. Next time when I go home, will post "how to prepare kadubu tumblers using jack fruit leaves?" with pics.







Ingredients:
Idli batter  (Check out How to Prepare the Batter for Idli Using Idli Rava?)
4-5 tbsp water (if required).
2-3 tbsp oil (preferably coconut oil)

How To Prepare  Idli? 
  • Get the batter to a right consistency by adding 4-5 tbsp of water if required.( It is always good to have right consistency before fermenting itself ).Grease the Idli plates/molds with little oil.Pour the idli batter to idli plates using a ladle. 


  • Add water to cooker/idli cooker and keep the flame in medium. As soon as water boils, keep the idli plates inside and close the cooker.(If you are using normal cooker , please don't put the weight). All we have to do is, steam these idlis for about 15-18 minutes.
                                      

  • You will get a nice smell of Idli after 15 minutes.Now switch off the flame and leave it for 5 minutes. After 5 minutes open the cooker and keep the idli plates out.Let it cool down little bit(approximately around 1-2 minutes).Now using a spoon slowly take out the idlis.



How To Prepare  Tumbler Idli? 
Same batter can be used to prepare tumbler Idli. Its very simple, instead of Idli mold we will be using stain less steel tumblers. 
  • Grease the tumblers with little oil. Pour the batter to fill 3/4th of the tumbler. Steam these for about 15-18 minutes in cooker without putting weight. Here we go with the pics...


  •  After you switch off the flame, leave it for 5 minutes. Now open the cooker and if you can see small wholes on the top you are done. Take out all the tumblers out .Let it cool for 2-3 minutes. Take the idlis out carefully.(Using a spoon scrape the outer part .Hold the tumbler up side down and tap once)
