Sweet Pongal/Sakkarai Pongal (Traditional Style)

This is one of the most common sweets prepared at every household in Tamilnadu , India. I just love the taste of it. Main ingredients of this recipe are rice, moong dal, jaggery and ghee. I have already shared the spicy version ie, khara pongal in my earlier post.
Serve this hot tasty sweet pongal with spoonful of ghee.
original recipe is here ...

Serves 2-3

Ingredients:
1/2 cup Raw Rice
2 tbsp Moong Dal
3/4 cup jaggery
3 cups of water
2-3 tbsp ghee
1/2 tsp of cardamom powder
1 tbsp cashew nuts
1 tbsp raisins

How to Prepare ?
  • Wash rice and keep it aside.
  • Take a cooking vessel and dissolve jaggery in approximately 1 cup of water. Then heat it up till all the lumps dissolve completely. Bring it to a boil for a minute or so and switch off.

  • Strain the jaggery syrup to remove the impurities if any. Add cardamom powder to it and keep it side.
  • In a cooker, heat 1 tsp of ghee and roast cashews and raisins. Transfer the roasted dry fruit to a plate. In the same cooker, roast the moong dal till you get nice aroma. Now add washed rice to it. Saute everything together for a minute. Now add 3 cups of water to it and mix it well. Close the lid and pressure cook it until mushy. After pressure releases, open the cooker and mash it well.

  • Keeping the flame in medium , add in jaggery syrup.Cook well for 5-8 minutes with continuous stir. If it gets dry add in ghee and cook till it reaches pongal consistency. Now add in remaining ghee, roasted dry fruits and mix it nicely. Switch off the flame.

  • Serve hot with spoonful of ghee on top.

Notes/Tips:
  • You can increase the quantity of moong dal if you like.
  • After some time , it becomes thick and dry.Either you can mix hot milk or ghee before serving.
