Rava Ladoo/ Sooji Laddu/ Semolina Laddu/ grieß Sweet balls

Rava Ladoo is a very famous Indian dessert made with Semolina/Sooji/Rava ,coconut(optional), sugar, cashew nuts  and ghee.Interesting fact about this recipe is sugar powder is used instead of traditional way of making one string consistency sugar syrup.Preparation is easy but little time consuming as we have to make laddus ( roundels).
Today my son turned 15 months old .... So I made sooji laddus and he liked it too much !!






Ingredients:
1 cup Fine Rava/Sooji/Semolina/grieß
3/4 to 1 cup  powdered sugar /( very very fine sugar)
1/4 cup ghee
1/4 cup hot milk
1/4 tsp cardamom powder
1/2 tbsp cashew nuts
1/2 tbsp raisins
1/3 cup fresh grated coconut / dry coconut flakes 

                   
                                                       

How To prepare ?
  • In a heavy bottomed pan, heat 1 tbsp of ghee and fry cashews and raisins and keep them aside.
  • To the same pan add remaining ghee and add rava to it.Fry it for about 9-10 mins keeping the flame in low.



  • Do not over fry Rava, as soon as you see bottom is getting light brown or after getting the nice aroma, add coconut powder, sugar, fried cashews, raisins and cardamom powder and mix it well. Fry this mixture for 3-4 mins more.


                                 
  • Now switch off the flame and add hot milk little by little, and mix well. Get the mixture to a consistency where we can prepare laddus. You needn't use entire 1/4 cup & Do not add the milk at one go.
  • Transfer the mixture to a another bowl and grease your palm with little ghee /milk and make laddus when it is warm. If it gets cold you cant make laddus. Sprinkle 1-2 tsp of milk if the mixture becomes dry. 
  • Let the laddus rest for about 15 mins.After 15 minutes, transfer them into a airtight container and consume within 7 days.




Note:

  • This gives the medium sweet laddus, if you want too sweet use 1 cup of sugar instead of 3/4 cup.
  • If you feel the mixture is too dry, sprinkle some more milk and make laddus. Alternatively , if the mixture cools down at the end, you can warm it little and try making laddus.
