Pan Fried Potatoes

Who doesn't like having pappadam/potato chips/some fried stuff along with rasam and rice ?? Here is one  healthier option "Pan fried Potatoes"  which can be served along with rasam and rice.

My mother prepares this dish in a iron "banale"( thick bottomed pan) using coconut oil. Amazing taste.....This goes well with lemon rasam. She will serve these dishes ( pan fried potatoes + lemon rasam) along with rice for light dinner. Usually light dinner will be served at my home to the family members/guests who will be travelling that day.




Serves 1-2

Ingredients:
2 medium size potato
1-2 tsp red chilly flakes /red chilly powder
salt to taste
1/2 tsp turmeric powder
2-3 tbsp of oil .


How To Prepare?

  • Peel off the skin of cleaned potatoes. Chop them into thin slices.Mix one cup of water,1/2 tsp of salt  and sliced potatoes in a bowl. Keep it aside for 10-15 mins.
  • Heat two tbsp of oil in a thick bottomed pan.Strain the water, add potato slices  to the pan. Keep the flame in low and stir in between so that it will not get burnt at the bottom. Cover the pan and let it cook.

                               
  • When the potatoes are half cooked ,sprinkle salt,red chilly flakes and turmeric powder on top of it.Mix gently. Remember you have added little salt to the potatoes in the beginning. Adjust accordingly.

  • Allow the potatoes to cook. Insert a fork and check whether they are cooked or not.If you feel its getting burnt before its completely cooked, add one more tbsp of oil.Before you switch off the flame, you can check for salt and spiciness and adjust again if required.
Note/Tip: Saute gently just to ensure slices will not break. You will break few of the slices !! never Mind :-)
