White Asparagus Jeeraga Tambli/Mosaru Gojju/Mixed with Coconut n Yogurt


Asparagus is a well known vegetable in Germany and it is loved by Germans. I even heard somebody telling , "Asparagus  is the king of vegetables" :-)
This vegetable is very rich in vitamins and minerals and  low in calories. I have tried a typical recipe mosaru gojju/ tambli of Karnataka using white asparagus here. 



Serves: 2
Ingredients
  • 4 sticks of white asparagus
  • 1 green chili
  • 1 tsp urad dal
  • 1/2 tsp mustard
  • 1/2 tsp of jeera/cumin seeds
  • 10 curry leaves/kadi patta
  • 1 tbsp oil
  • salt as required
  • 2-3 tbsp of grated/chopped coconut / kokos raspeln
  • 1/4 cup curd/yogurt
How to Prepare ?
  1. rinse, peel and chop the white asparagus into small pieces.
  2. Transfer it into a cooking vessel and add 1/4 cup of  water.Cook for 10 mins and cool it down.
  3. Now add  green chilly , curd/yogurt ,kokos raspeln /coconut , jeera , salt and cooked asparagus to a mixer jar.Grind it into a fine and thin paste.Transfer this mixture into a serving bowl.
  4. heat oil in another pan,add mustard seeds and urad dal. Fry till the mustard seed pops out.Now add curry leaves and switch off the flame. Add this seasoning on top before you serve.
  5. This goes well with Rice/Parata.
