Baby Spinach Tambli ( Yogurt Based Curry Using Baby Spinach)

                  
Tambli/Tambuli(yogurt curry) is one of the most commonly prepared curry in every brahmin household specially in many regions of Karnataka. Today I will share the recipe of baby spinach tambli. I have already shared similar recipe palak tambli,ie yogurt based curry using Indian spinach in my earlier post. 
 Blend of coconut, sauteed baby spinach with roasted cumin seeds, roasted back pepper corns and curd makes this dish very healthy & refreshing. Its kids friendly too. 
  Serve this fresh baby spinach tambli with warm rice and moru molaga/shandage munanchi/Majjige Menasu/Sundried buttermilk chilies.Without wasting any time, let me jump into the detailed recipe.


Ingredients :


two handful of cleaned fresh baby spinach (hold tightly and measure)

1 tsp of jeera/cumin seeds
1 tsp of ghee
6-7 black pepper corns
1 Green chilly (optional)
approximately 1 cup of curd ( add more if you like)
1/4 cup of  grated fresh coconut
salt to taste

For Seasoning:

1 tsp of ghee
9-10 curry leaves
1 tsp of mustard
1/2 tsp of jeera/cumin seeds


How To Prepare?

  • In a pan/kadai, heat 1 tsp of ghee. Add black pepper corns and cumin seeds to it. After frying spices  for 20-30 secs, add in baby spinach and saute until it becomes 1/4th of the original volume.Switch off the flame and let it cool down completely.



  • Add coconut,salt,green chilly(optional) and sauteed baby spinach to the mixer jar. Grind everything together into a fine paste.Now add curd and grind well again until it becomes a thin fine paste.



  • Pour the tambli into a bowl and adjust the consistency by adding water. Mix it well after adding water. Tamblis should be of pouring consistency.
  • In the same pan heat 1 more tsp of ghee. Add mustard seeds to it.As soon as the mustard seeds pop out add in curry leaves and cumin seeds. Fry for 10 secs and  switch off the flame.Pour this seasoning on top of tambuli. Mix it well before you serve.


Tips/Alternate:
  • You can play around with seasoning ingredients by adding/omitting few ingredients.

Bole Tambli (Jack Fruit Seed Yogurt Based Dish with Dry Red Chilly)

I  have already shared one version of Jack Fruit Seed Tambli using Green Chilly.Today I am going to share one more easy version of this bole tambli using common ingredients available in your kitchen.In this recipe , boiled jack fruit seeds will be ground along with coconut, dry red chilly, cumin seeds  and yogurt to make a thin gravy. Hot seasoning will be prepared and poured on top of this gravy to end the preparation.Serve this comforting dish with warm rice  :-)
Without wasting any time , let me directly jump to the detailed recipe.






Serves 2-3 

Ingredients:
8-10 jack fruit seeds
salt to taste
3/4  to 1 cup of buttermilk/thin yogurt
1-2 tbsp of fresh grated coconut/coconut flakes
1 dry red chilly ( you can increase if you want spicy tambuli )

1/2 to 3/4 tsp cumin seeds

for seasoning:
1 tsp musatd seeds
1/2 tsp urad dal
1 red dry chilly , chopped into halves (optional)
1-2 tsp of cooking oil/preferably coconut oil
6-8 curry leaves


How To Prepare?
  • Wash and boil the Jack fruit seeds until they are soft. 
  • You can pressure cook these seeds, but for this recipe you need only 8-10 seeds. So you can cook these seeds directly in the cooker along with rice. (as shown in the pic below, drop these seeds in water outside the rice vessel). That way you will save time and fuel.OR directly on  a separate vessel you can cook till they are soft, whichever you feel comfortable.
  • Take out the boiled seeds and let it cool. Once it is cool, remove the outer skin and transfer them to a mixer jar.
     
  • Add dry red chilly, coconut, cumin seeds and salt into it . Grind all the ingredients into a smooth paste with little water.If you are using yogurt , Add yogurt to it and grind all together once again.If you are using buttermilk, add it to the ground paste and mix well. 
                                

  • Prepare the seasoning in separate pan. Heat oil in  a pan . Add urad dal , mustard seeds and red chilly to it . Fry till mustard seed pops out . Now add curry leaves  .Fry for few secs and add on top of the tambuli. Give a nice stir before you serve. This goes well with warm rice.

                                                    

Tips/Notes:

  • Don't use very sour curd /yougurt/ buttermilk.
  • Cook the seeds till they become very soft.
  • Tambuli taste well when its consistency is like thin batter.

SuvarnaGedde Tambli (Yogurt Based Yam Dish)/ Yam Raita

If I ask my husband during weekend "What do you want me to cook for today ? ", He will be very happy to tell me a menu  which includes "Tambli" for sure :-) . End of the day we all  like delicious home food makes us feel complete. Isn't it ? I have many other Tambli recipes in my regular menu list. They are Shunti Tambli, TomatoTambli , Menthe tambli , Palak tambli , Jack Fruit Seed Tambli etc..etc
Today I will share one another easy Tambli using yam which I learnt from my neighbor aunty during my stay in Krishna Nagar Apartments Bangalore.Like other Tamblis,  this is also prepared using coconut and curd. Serve this mild yogurt based dish with warm rice. Serves 2-3 

Ingredients:
1/2 - 3/4 cup of cleaned chopped Yam cubes
salt to taste
1-2 cups of yogurt
2-3 tbsp of fresh grated coconut/coconut flakes
1 green chilly ( you can increase if you want spicy tambuli )

for seasoning:
1 tsp musatd seeds
1/2 tsp urad dal

1/2 tsp of jeera/cumin seeds
1 red dry chilly , chopped into halves
1-2 tsp of cooking oil/preferably coconut oil
6-8 curry leaves


How To Prepare?
  • Wash and boil the Yam till they become soft. I usually pressure cook them.
  • Take out the boiled yam cubes and let it cool. Once it is cool, Transfer them to a mixer jar.Add green chilly, coconut and salt into it . Grind all the ingredients into a smooth /coarse paste.Now Add yogurt to it and grind all together till it becomes fine paste.Pour this tambuli into a serving bowl.
     
                              

  • Prepare the seasoning in separate pan. Heat oil in  a pan. Add urad dal , mustard seeds and red chilly to it . Fry till mustard seed pops out . Now add cumin seeds and curry leaves .Fry for few secs and add on top of the tambuli. Give a nice stir before you serve. This goes well with warm rice.



Tips/Notes:

  • You can add more curd if you like. Don't use very sour curd.
  • You can add turmeric while boiling Yam.

Jack Fruit Seed Tambli /Yogurt based dish(Kujje Bole Tambli)

I am here today to share one more variety of tambuli /tambli using Jack Fruit seeds with you all. This is again an authentic udupi cuisine. Tried the same old recipe learnt from my mom. Using common ingredients available in your kitchen like coconut, green chilly and yogurt you can prepare a relishing Jack fruit seed Tambli. Serve this mild yogurt based dish with warm rice and make your family happy :-)

Without wasting any time , let me directly jump to the detailed recipe .




Serves 2-3 

Ingredients:
4-5 jack fruit seeds
salt to taste
1-2 cups of yogurt
2-3 tbsp of fresh grated coconut/coconut flakes
1 green chilly ( you can increase if you want spicy tambuli )

for seasoning:
1 tsp musatd seeds
1/2 tsp urad dal
1 red dry chilly , chopped into halves
1-2 tsp of cooking oil/preferably coconut oil
6-8 curry leaves

Palak Tambli/Tambuli (Spinach Yogurt Curry)

                      

Tambli/Tambuli(yogurt  curry) is one of the most commonly prepared curry in every brahmin household specially in Udupi. Today I will share the recipe of tambli prepared using spinach/palak. Blend of coconut, sauteed palak with cumin seeds, green chilly and curd makes delicious "palak tambli". Usually tamblis are every easy to prepare.I have already shared other varieties of tambulis in my earlier posts.
 We can prepare palak tambli in two ways. They are "Green chilly version" and "Black pepper version". Please refer to my tips/alternate section for more.
 Serve this fresh palak tambli with Rice and moru molaga/shandage munanchi/Majjige Menasu/Sundried buttermilk chilies.Without wasting any time, let me jump into the detailed recipe.

Ingredients :

handful of cleaned fresh spinach (hold tightly and measure)
1 tsp of jeera/cumin seeds
2 tsp of ghee
1 Green chilly OR 5-6 black pepper corns (you can use either green chilly or pepper corns as per your preference)
approximately 2 cups of curd
3 tbsp of grated fresh coconut
salt to taste

For Seasoning:
9-10 curry leaves
1 tsp of mustard
1 tsp of urad dal
1/2 tsp of jeera/cumin seeds
1-2 dry red chilies cut into halves

How To Prepare?

  • In a pan/kadai, heat 1 tsp of ghee. Add cumin seeds to it. Fry for 20-30 secs.
  • Now add spinach and saute for 1-2 mins until it becomes 1/4th of the original volume.Switch off the flame and let it cool down completely.
     
     

     

  • Add coconut, salt, green chilly and sauteed palak to the mixer jar. Grind everything together for a minute.Now add curd and grind everything well again until it becomes a thin fine paste.





  • Pour the tambuli into a serving bowl and keep it aside.
  • In the same pan heat 1 or 1/2 tsp of ghee. Add mustard seeds, urad dal,cumin seeds and red chilly. As soon as the mustard seeds pop out add in curry leaves and switch off the flame.
  • Pour this seasoning on top of tambuli. Mix it well before you serve.

Tips/Alternate:
  • Above mentioned recipe is "Green chilly version".
  • For "black pepper version" use black pepper instead of green chilly , its very good for health too. Along with cumin seeds you have to add black pepper in the first step itself and fry for 20-30 secs. Rest of the recipe remains same.
  • You can play around seasoning ingredients by adding/omitting few ingredients.
  •  If I go for black pepper version, then I use only cumin seeds and curry leaves in the seasoning. That is  how my aunt prepares and its a heavenly taste.
