How to Prepare ?
  1. Rinse, peel and chop the Asparagus into small pieces.Peel and chop the potato too.
  2. Transfer the chopped veggies into a cooking vessel .Add very little water , turmeric powder , pinch of salt add little oil and cook for 5 mins . This shouldn't be overcooked .
  3. Heat the oil in a pan , add mustard seeds , urad dal  and channa dal
  4. Fry till the mustard seed pops out , now add curry leaves and green chilly. ( be careful ...make sure that you don't burn these !! )
  5. Now add cooked asparagus and potatoes , sprinkle remaining salt  and stir
  6. cover and let it  cook for a 5-6 minutes
  7. sprinkle some water  if required if the moisture dries in the pan.
  8. Now add coconut , jeera/cumin powder and give a stir.Switch off the flame.
  9. Before adding the coconut, if there is water in the pan, then dry it by simmering on an open flame for a few minutes.
  10. This goes well with Rice/Roti/Chapati.

If you want this dry curry to be more spicy , you can also add red chilly powder before you add coconut.
