Eggless Coconut/Kokos Cookies

Very simple preparation ... These cookies are healthy as it doesn't contain baking powder/soda. Try the recipe and Enjoy the crunchy cookies along with tea. 




Ingredients :

1 cup all purpose flour/ wheizen mehl type 1050
1/2 cup salted butter
1/2 cup powdered sugar
1/4 cup + 2 tablespoon coconut flakes/kokos raspeln
2 teaspoon of cold milk
1/2 teaspoon vanilla essence


How to Prepare?
  • Preheat the oven to 180 degree C
  • Cut the butter into small cubes. Add these cubes along with powdered sugar into big mixing vessel .
  • Use fingers to mix it well until butter melts and blends well with the sugar.
  • Now add vanilla essence, milk and mix again.
  • Add flour and coconut flakes little by little and mix the mixture and prepare the dough.
  •  Now dust the board/area with little flour where you will flatten the dough .Flat the dough into 1/2 inch thickness evenly. (As we are going to cut the cookies into square shape ,we will have to make one big square when we flatten it)

  • Now sprinkle 2 tablespoon of coconut flakes on top and run a chapathi roller only once so that flakes get set nicely on top. After that Using knife cut into cookies of square shape. 


                         
                     Note: Instead of square cookies You can also make the regular cookie
                     shape that is round by pinching out small portions from the dough.


  • Slowly remove the cookies using knife and place on the baking sheet .
  • Bake in a preheated oven for 10 mins at 180 degree C only. You should bake until bottom side and edge of cookie starts turning into light brown. After 10 mins , turn one cookie and check the color. If its not yet done , keep it for 5 more mins and check again . It varies from oven to oven . In my oven it took only 13 mins
  • Remove cookies from the oven and store it in a airtight container after it cools down. 


Note
  • Regarding my measurement , you can choose a cup of any size. I usually take a cup of small size when I  try any recipe for the first time :-).
  • My cookies have turned light brown in color because I have used wheizen mehl type 1050 , this flour is very similar to wheat flour which we get it in Indian stores .If we use all purpose flour/maida cookies will turn into white color.
