Tamarind Rice /Pulihora

"Correct combination/proportion of salty,sour,spice and sweet makes any dish delicious ". I feel this is one of the secrets of cooking. 

Combining basic Indian spice (red chilly),salt,sour(puli/tamarind) and sweet(jaggery) with rice turns into a Tamarind Rice !!!!


Ingredients :
2 cups of cooked rice  ( don't cook too much , each grain should be separate)
1 teaspoon urad dal 
1 teaspoon channa dal
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chilly powder 
1 teaspoon of tamarind paste
1/2 tablespoon of grated jagerry /sugar
10-15 curry leaves
25-30 ground nut /peanuts
1 tablespoon of chopped coriander leaves (optional)
salt to taste
2-3 tablespoon of cooking oil 

How To Prepare?
  • Mix red chilly powder , jagerry , tamarind , salt , turmeric powder in a mixing bowl and keep the masala mix ready. (Add water say about 1/4 cup)
  • In a large pan/kadai dry roast the peanuts and transfer them into a different bowl.
  • Keep the flame in medium and prepare the seasoning .To the same pan , add cooking oil , urad dal , channa dal and mustard seeds fry for few secs . After the  mustard seeds pops out , add curry leaves , peanuts and prepared masala mix.Let it boil for 8-10 mins. 
  • Add the rice and  Switch off the flame. Mix it well to make sure rice has got all the masala. Serve hot with curd.

  Alternate
 Instead of red chilly powder you can use dry red chilies which has to be added along with other seasoning ingredients.
