Shortcut Veg Kurma

 This was one of my  childhood favorites. No frying separate masala here, not too many veggies are required. This can be served with poori or chapati.





Serves 2-3

Ingredients :
one big size onion (optional)
2-3 medium size tomato
one green chilly
50 gms of beans chopped into 1 inch long pieces
one medium size carrot chopped into small pieces
2 medium size potato peeled and chopped into small pieces
2-3 tbsp grated coconut
7-8 cashew nuts
2 tbsp finely chopped coriander leaves
salt
1/2 tsp turmeric powder
1 tsp MTR garam masala
1/4 tsp tamarind paste


For Seasoning:
9-10 curry leaves
1 tsp mustard
1 tsp urad dal
one dry red chilly slit into 2 pieces (optional)
1 tbsp oil



How to Prepare?
  • Cook carrot, potato and beans together and keep it aside . Make sure that you don't cook it completely. veggies should not be very soft .
  • In a big heavy bottomed pan dry roast coconut and cashews and keep them aside .After it cools down add 1 tbsp coriander leaves , one green chilly , tamarind paste and MTR garam masala powder to it and grind them into a fine paste and keep it aside.
  • To the same pan , add 1/2 tbsp of oil.Add chopped onions and turmeric to it .Fry till it becomes golden brown. Now add tomatoes and fry it for 5-6 minutes. Remove it from the flame. After it cools down blend it into a fine paste and keep it aside.
  • In a same pan , add remaining oil to prepare tadka/seasoning . First add urad dal , mustard seeds and then red chilly.After mustard seeds pops out add curry leaves and add ground tomato onion gravy to it.Fry for 2-3 mins.
  • Now time to add boiled veggies and salt.Give a quick stir after adding and let it boil for 2-3 mins .
  • Now add ground coconut-cashew gravy and stir for few secs.Keep it in a low flame for about 7-8 mins.
  • At the end check for the salt ,consistency  and adjust accordingly. Finally add remaining coriander leaves and switch off the flame .

Note:
  • As I mentioned above you can avoid onion , that's how my mom used to prepare as her most of the preparation is without onion and garlic.
  • You can use few veggies like capsicum , gobi (cauliflower), green peas along with above mentioned veggies .I usually go with different combination every time which gives a different taste.
  • Don't throw the vegetable stock , add them at the end instead of water while adjusting the consistency.
