Capsicum Rice

Rice mixed with sauteed veggies and flavored with few spices !! 

Ingredients :

2 cups cooked rice
1 medium size carrot
1 big size capsicum
1 medium size onion
1-2 green chilles
1 tsp chopped cashew nuts
1 tsp raisins
1/4 tsp turmeric powder
1/4 tsp red chilly powder
1/2 tsp jeera/cumin seeds
salt to taste
2-3 tbsp ghee/cooking oil
1 tsp lemon juice
1/2 tsp sugar
8-10 curry leaves

How To prepare?
  • Chop washed and cleaned vegetables and keep them aside( chop them into thin pieces of 1-2 inches long)
  • Heat ghee in a thick bottomed pan. Add jeera,cashew nuts and fry for 10-15 secs.

  • Add raisins, curry leaves and green chilly. Saute for 4-5 secs.
  • Add chopped onions,turmeric powder.Saute everything together for 5 mins.
  • Now add capsicum and then carrots.Mix well ... saute for 5 more mins.

  • Now add salt, red chilly flakes and give a nice mix.
  • Make sure that all the veggies are three fourth cooked.

  • Now add cooked rice, lemon juice, sugar and mix nicely. Check the salt and adjust.
  • Serve hot with raita or plain curd.
