KoduBale/ Rice Spicy Rings(Special Snack of Karnataka)

Kodubale is a traditional tea time/all time snack of Karnataka.Main ingredient used to prepare dough is Rice flour.Using dough small rings will be prepared and deep fried.Though the recipe is easy, it is time consuming.Be patient while frying .... keep the flame in medium because Kodubales cook too quickly on the outside and stay soft in the center.It is worth making at home as it is very very tasty !!

Ingredients:

1 cup rice flour
1/3 cup maida /all purpose flour
salt to taste
water as required
1-2 tsp red chilly powder ( please adjust according to your level of spiciness)
1/4 tsp asafoetida powder
6-8 curry leaves finely chopped
1 tbsp fresh grated coconut/coconut flakes (optional)
2 tbsp oil for dough preparation
1/4 liter oil for deep frying

How To Prepare?
  • In a large mixing bowl, mix all dry ingredients [rice four, all purpose flour, salt, red chilly powder,coconut flakes,asafoetida and curry leaves] well.
  • In a small frying pan, heat 2 tbsp of oil and pour on top of mixture. When you pour, you should hear the sizzling sound.

  • Take spatula and mix well.( Please don't use your hands.Use spatula/fork to avoid  burning your hands).Let it cool down little bit.
  • After it cools down, add water little by little to the mixture and prepare a medium soft dough using your hands/fingers.
  • check the salt and spiciness for one last time and adjust at this stage.
  • In a frying pan, pour enough oil for frying. Keep the flame in medium. Let it heat up ...meanwhile prepare the rings.
  • Take out small portion of the dough.Gently roll on a flat surface to make a medium thick single rope. Cut the rope into 2-3 ropes and join at the ends of each rope to make them as a rings.

  • Prepare 11-12 rings and keep them aside.(Again , it depends on the amount of oil you have taken for frying and the size of your kadai/pan.Adjust # of rings per turn accordingly)
  • Once the oil is hot (to check, pinch out a dough and put in the oil, it should come up immediately),you can go ahead and fry the rings.
  • Turn the flame to high, place prepared 10-12 rings one after another in a heated oil carefully.
  • After two mins turn the flame to medium.
  • After around 3-4 minutes, turn the kodubale/rings to the other side and cook.


  • While waiting, prepare rings with the remaining dough for the next turn.
  • We should keep a eye on whether we are done or not ?? Entire ring should turn light brown color.Other way of checking is bubbling should stop. 
  • Once the kodubales become light brown in colour, take them out and put them on a kitchen tissue.
  • Repeat the same procedure for the remaining dough.
  • Store them in an airtight container after it cools down completely.
  • Enjoy with tea/coffee.:-)
