Palak Tambli/Tambuli (Spinach Yogurt Curry)

                      

Tambli/Tambuli(yogurt  curry) is one of the most commonly prepared curry in every brahmin household specially in Udupi. Today I will share the recipe of tambli prepared using spinach/palak. Blend of coconut, sauteed palak with cumin seeds, green chilly and curd makes delicious "palak tambli". Usually tamblis are every easy to prepare.I have already shared other varieties of tambulis in my earlier posts.
 We can prepare palak tambli in two ways. They are "Green chilly version" and "Black pepper version". Please refer to my tips/alternate section for more.
 Serve this fresh palak tambli with Rice and moru molaga/shandage munanchi/Majjige Menasu/Sundried buttermilk chilies.Without wasting any time, let me jump into the detailed recipe.

Ingredients :

handful of cleaned fresh spinach (hold tightly and measure)
1 tsp of jeera/cumin seeds
2 tsp of ghee
1 Green chilly OR 5-6 black pepper corns (you can use either green chilly or pepper corns as per your preference)
approximately 2 cups of curd
3 tbsp of grated fresh coconut
salt to taste

For Seasoning:
9-10 curry leaves
1 tsp of mustard
1 tsp of urad dal
1/2 tsp of jeera/cumin seeds
1-2 dry red chilies cut into halves

How To Prepare?

  • In a pan/kadai, heat 1 tsp of ghee. Add cumin seeds to it. Fry for 20-30 secs.
  • Now add spinach and saute for 1-2 mins until it becomes 1/4th of the original volume.Switch off the flame and let it cool down completely.
     
     

     

  • Add coconut, salt, green chilly and sauteed palak to the mixer jar. Grind everything together for a minute.Now add curd and grind everything well again until it becomes a thin fine paste.





  • Pour the tambuli into a serving bowl and keep it aside.
  • In the same pan heat 1 or 1/2 tsp of ghee. Add mustard seeds, urad dal,cumin seeds and red chilly. As soon as the mustard seeds pop out add in curry leaves and switch off the flame.
  • Pour this seasoning on top of tambuli. Mix it well before you serve.

Tips/Alternate:
  • Above mentioned recipe is "Green chilly version".
  • For "black pepper version" use black pepper instead of green chilly , its very good for health too. Along with cumin seeds you have to add black pepper in the first step itself and fry for 20-30 secs. Rest of the recipe remains same.
  • You can play around seasoning ingredients by adding/omitting few ingredients.
  •  If I go for black pepper version, then I use only cumin seeds and curry leaves in the seasoning. That is  how my aunt prepares and its a heavenly taste.

Unicum is one of the national drinks of Hungary.This was created by  Dr. József Zwack. To me it tasted more or less like Amritarista ( this is one of the aristas in Ayurveda , consumed during fever).

Never Miss to Buy a Special Seasoning Salt From SalzBurg

" ಉಪ್ಪಿಗಿಂತ ರುಚಿಯಿಲ್ಲ; ತಾಯಿಗಿಂತ ಬಂಧು ಇಲ್ಲ." , this is one of the famous proverbs in Kannada. Remembered this proverb looking at many varieties of salt :-).

Visiting Salzburg, city in  Austria is worth once in life time. It is so beautiful and amazing. I really enjoyed watching the nature all 3 days of my stay. Of course every new place I visit I am so curious about the local food and style of preparation. But here in Salzburg I found couple of hours was not sufficient enough for me to explore on different types of salt available in the store, located in front of  Hallein Salt Mine.

As per Ayurveda, Saindhava Lavana/Rock Salt is good for health than the normal salt You can find rock salt as well as different spicy salts/seasoning salts in the same store.

  Friend of mine had got me one of the salts, "Bad Ischler Gewurz Salt" from the same place(shown below in the pic) before I visited salzburg.I used it while preparing the Brown ChikPeas Cutlets as a substitute for chat masala. I am sure we can use this seasoning salt in place of our Indian chat masala in few other dishes too like patties , samosas and bread rolls.


"Bad Ischler Gewurz salt" contains the following herbs basil, dill, parsley, marjoram, 
rosemary, bay leaves, and thyme.  Onions, celery, mustard flour, fennel, coriander and caraway are also added to the mix. My family enjoyed the freshness and aroma of this seasoning salt. I just spoke about one type of seasoning salt.There are other varieties of seasoning salts too at the store.

Instant Lemon Rice Sevai


                          


I would like to share one more easy breakfast recipe "Lemon Rice Sevai" with you all today.  "Rice Sevai " is nothing but Rice noodles. Rice Noodles will be seasoned with few spices and mixed with lemon juice, salt and jaggery in this recipe. You can use either instant rice noodles or home made rice noodles (rice string hoppers/ idiyappam).

  I have used three brands of instant rice noodles till now , They are  MTR , Anil and  Sri ganeshram's 777 Brand. All three brands work well.Serve hot lemon rice sevai with hot filter coffee. You can serve with coconut chutney and pappadam too. 
Kids will like this lemon rice sevai along with sugar and ghee.:-)

Ingredients :
200 gms Instant Rice Sevai
1 teaspoon urad dal 
1 teaspoon channa dal
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1-2 dry red chilly, split into halves
1-2 fresh green chilly, split into halves ( increase if you like spicy)
1-2 lemon, (squeeze and keep the juice ready)
1/2 tablespoon of grated jagerry /sugar
10-15 curry leaves
15-20 ground nut /peanuts
3-4 tbsp freshly grated coconut
salt to taste
2-3 tablespoon of cooking oil

How To Prepare ?
  • As per the instruction given in the packet, cook the rice sevai if you are using instant rice noodles.
  • I used  777 Brand Rice Sevai today. So followed the below steps . i) Boil the water and switch off the flame.   ii) Immerse the sevai in the hot water and cover it for 2 mins.          iii)After 2 mins , drain the water completely.





  • Now add sugar (jaggery powder), salt and turmeric powder to the cooked sevai. After it cools down mix it well using hands gently.Break and separate the noodles carefully and keep it aside.I skipped this step and did it inside the kadai/pan only in the below step.
  • Now heat 3 tbsp of oil in a large thick bottomed kadai/pan.Add ground nuts and mustard to it. Once the mustard pops out,add in channa dal, urad dal and broken red chilly. Fry them nicely till lentils become golden brown.Finally add in curry leaves and fresh green chilly.Fry for few secs and switch off the flame.


  • Now add cooked rice sevai,freshly grated coconut and lemon juice squeezed from lemon.Mix everything gently and check the taste.Adjust the salt if required at this stage. We are done with "lemon Rice Sevai".


                                                 


Tips/Alternate:
  • Cook the rice sevai as per the instruction given in the packet. Don't ever over cook the rice sevai.
  • You can use cashew nuts instead of ground nuts.
  • You can mix jaggery/sugar with lemon juice before adding. You can plus/ minus the quantity of lemon juice, salt and sugar as per your taste.
  • You can add cumin seeds in the tadka/seasoning
  • You can garnish the lemon sevai with fresh coriander leaves.
  • Gently mix everything well  and make sure you are not breaking the rice sevai while mixing.
