Simple Potato Fry


Potato is the common vegetable which is consumed by people in almost every part of the world I guess. This special  vegetable can be cooked and served in  n number of ways . Potato goes well with many other vegetables and few types of lentils. I prepare this simple potato fry along with Rasam most of the time. Serve this dish along with Hot Rice and Rasam. Potato fry with "Paprupu Sadam" is also a good combo.

Ingredients
  • 3-4 medium size potatoes
  • a pinch of turmeric/haldi
  • 3 tbsp fresh grated coconut/kokos raspeln
  • 1 tsp red chilly flakes
  • 1 tsp of lemon juice
  • salt as required


 For Seasoning:
  • 1 fresh green chili/ red chilly, chopped(optional)
  • 1 tsp urad dal
  • 1/2 tsp mustard
  • 1/2 tsp jeera/cumin seeds
  • 10-12 curry leaves/kadi patta
  • 1-2 tbsp oil
  • 1 dry red chilly chopped into halves
How to Prepare ?
  • Pressure cook the potatoes (just 2-3 whistles) along with little salt.Make sure you don't cook the potatoes completely, because later you have to chop them into cubes.
  • Peel the skin of boiled potatoes and chop them into small cubes. 
  • Prepare the seasoning .Heat oil in a pan , add mustard seeds and urad dal. Fry till the mustard seed pops out,now add curry leaves, jeera,dry red chilly and fresh green chilly. Fry for few seconds.
                                                            
  • Now add chopped boiled potatoes and turmeric powder.Saute for a minute.Add red chilly flakes,salt and gently mix so that all the spices get combined well with potatoes. Saute everything together for 2 more minutes.Keep checking the pan in between and add sprinkle little water if required.
  • At the end and grated coconut/kokos raspeln and lemon juice give a quick gentle stir.Switch off the flame.Goes well with rasam,hot rice and spoon of ghee.
                       

Note/Tips
  • You can add onions and tomatoes in this dish.If you use tomatoes you needn't use the lime juice.
